Ken Botts is a man on a mission to bring Vegan food to Cafeterias EVERYWHERE! Ken is the Food and Nutrition Director for the Humane Society of the United States, however don’t let the “United States” part prevent you from discovering that actually Ken is spreading Vegan – Plantbased Information all over the World. Ken has literally been in the Food Industry his entire career and a large turning point in his life was when he was working at the University of North Texas and he decided to turn one of the Dining Halls into a Vegan Dining Hall. Yes, you read that correctly, he decided to take a typical Dining Hall on Campus and shift the ENTIRE meal to Vegan options and as you’ll hear in the podcast, the results were PHENOMENAL.
After the great success at University of North Texas, Ken was feeling that a change was in order and his wife moved back to sunny California and he wound up working for the Humane Society of the United States and now had the ability to take the passion he had to transform that Cafeteria and he teamed up with Chef Wanda White and put together: Food Forward and now this program is growing in leaps and bounds training Chefs and institutions on how to prepare Vegan – Plantbased Meals and Menus and be a part of the positive change.
