Vegan Fried Chicken

Ingredients:

 1 pound Seitan

1 teaspoon salt

1 teaspoon onion powder

1 teaspoon pepper

Cayenne, to taste, optional

4 tablespoons nutritional yeast

2 teaspoons baking powder

1 tablespoon garlic powder, optional

1/2 cup water

3 tablespoons yellow mustard or spicy mustard

2 cups unbleached flour, divided

3 1/2 cups vegetable oil

 

Directions:

  1. Put hot water in a bowl and stir in bouillon. Soak TVP in this liquid for 10 minutes. It will expand.
  2. Stir in just enough instant mashed potatoes to make a doughy mixture that can be formed into patties. Mix in salt, pepper, and other seasonings to taste.
  3. Dip patties in crushed baked potato chips, covering completely. Fry in oil until crispy.
